With a renovated image, “El Pabellón” is presented as Ivan Cerdeño’s spearhead in the capital.

The chef, who counts with a Michelin Star, has developed the proposal for this unique gastronomic space. A sober, lucid and lacking of artifice suggestion.
In our carte, diverse versions of legendary recipes from Carmen de Montesión can be found, as well as formulas created exclusively for Florida Retiro using Madrid’s tradition as an inspiration. All of them evoke Cerdeño’s identity and talent: the brilliant ingredients combination, successful counterpoints and finesse of compositions, marked by the taste of gastronomic memory.
